KUTTANADAN DUCK CURRY

Simple and Delicious Kuttanadan Duck Curry

 Ingredients:


Duck – 1 kg

Ginger – 1 big piece (Crushed)

Green chilly – 3

Turmeric powder - 1/2 tsp

Pepper powder – 1 tsp

Curry leaves

salt to taste


Onion – 1 big (Thinly sliced)

Ginger – 1 small piece (Crushed)

Garlic – 10 fat cloves (Crushed)

Green chilly – 4

Curry leaves

Tomato – 2 (Chopped)

Coconut milk

Turmeric powder - 1 tsp

Coriander powder - 1 tbsp

Red chilly powder - 1 tbsp

Garam masala – 1 tsp

Salt

Oil



Steps:

Add duck along with curry leaves, green chilly, ginger, turmeric powder, pepper powder and salt to a pressure cooker.

Loosely close the cooker and wait for the duck to release moisture. Cook on low heat.

Once the moisture is released, close the cooker and pressure cook for 1 whistle on high flame. Then release the pressure manually. (If you are using naadan duck, pressure cook for 1 whistle on high flame and cook for another 5 minutes on medium flame.)


Heat oil in a pan

Add onion, ginger, garlic, green chilly and curry leaves.

When the onion becomes golden, lower the flame and add turmeric powder. Sauté till the raw smell goes away.

Add coriander powder and sauté till the raw smell goes away.

Add red chilly powder and sauté till the raw smell goes away.

Add tomato, cooked duck, salt and garam masala.

Cover and cook.

Add coconut milk and curry leaves.

Cook for another 5 minutes.

Once the gravy thickens, switch off.

Leave it covered for 5 minutes.

Enjoy the duck roast with rice, appam or bread.
