MANJALI CHICKEN BIRYANI
The trending Biryani that is giving the age old traditional Kerala Biryanis a run for their money !
Rice and Masala cooked separately in this dish. Very flavoursome.
Total time is not inclusive of marinating time ( 20 minutes )

Ingredients :
FOR CHICKEN MARINATE
Chicken - 1kg
Chilli powder - 1 tbsp
Turmeric powder - 1/2 tsp
Lime juice - 1/2 tbsp
Salt
FOR CHICKEN MASALA
Oil - 2 tbsp
Curry leaves
Onion - 3
Tomatoes - 2
Ginger garlic paste - 1&1/2 tbsp
Green chilli - 1
Water - 3/4 cup
Oil - 4-5 tbsp
Salt
Coriander powder - 2&1/2 tbsp
Turmeric powder - 1/2 tsp
Chilli powder - 1/2 tbsp
Water - 3/4 cup
Garam Masala powder - 1&1/2 tsp
Lime juice - 1/2 tbsp
Coriander leaves - 1/4 cup
Ghee - 2 tsp
FOR RICE
Jeerakasala /kayama rice -3 cups
Ghee - 4 tbsp
Oil - 4 tbsp
Onion - 1
Cinnamon - 2
Cloves - 4-5
Cardamom - 3
Star anise - 2
Fennel seeds - 1 tsp
Chopped garlic - 1/2 tbsp
Water - 4&1/2 cups
Salt
Carrot - 1
PREPARATION :
1. Clean ,rinse and drain the chicken pieces for the biryani.add chilli powder-1 tbsp, turmeric powder-1/2 tsp, lemon juice-1/2tbsp and salt.Rub these ingredients, thoroughly into the chicken and set aside for 20 minutes first
2. Add the ginger and garlic to a food processor / grinder jar , adding a little water to make a nice, smooth paste.
3. Slice the onions, tomato, green chilli and set aside.
4. Rinse the rice several times , till the water runs clear. Cover with fresh water and soak for 10 minutes.Drain and set aside.
5. Add 2tbsp oil &add the marinated chicken to a wide based-pot ,Fry for One minute &adding 3/4 cup of water, Cover & cook for 10 minutes .
6. The chicken will have just steamed in the water , losing its pink colour .Now let's reserve the cooking-broth for later.
7. Next we will lightly fry the chicken pices that have been removed from the liquid and drained well.
8.using combination of sunflower-oil /coconut-oil ,Fry the pieces for under 2 minutes per side .You don't want to fry the chicken too much ,just develop a pale golden crust .set aside the par-fried chicken .
Masala for Chicken .
9. Remove all But 4tbsp of oil from the pot .To this add the curry leaves first , followed by the sliced Onion .
10. patiently , on a medium flame , sauté for 10 minutes .stir continuously .You can't afford to leave the onion without stirring , please be careful .any charred taste of the Onions will ruin the taste of the masala .
11.After 10 minutes ,the Onions will develop a lovely gold-brown hue.
12.Now add the sliced Tomatoes . Stir & cook till the Tomatoes have softened.
13. Add Ginger-Garlic-Paste, sliced green chillies, Sauté till the raw smell of Ginger and Garlic subsides ,Cover & cook for 4 to 5 minutes.
14. Add Spice powders now: Coriander, Turmeric & chilli powder. Stir till fragrant , Don't cook too long.
15. Add the reserved cooking broth now as well as 3/4 cup of water as needed ,then add 1/2 tbsp Lemon-juice.
16.Returned the par-fried chicken now .Mix well then add Garam Masala now ,Taste and add salt as needed after tasting , stir well.
17.Add Freshly chopped Coriander leaves and Ghee 2tsp -stir through once again & set aside the prepared chicken Masala .
Cook The Rice
18. Heat a heavy based pot with lid suitable for cooking the rice .
19. Add Ghee and Oil , once hot add the sliced onions & sauté till golden .
20. Add whole spices (Cinnamon, Cardamom ,Cloves ,Star anise & Fennel Seeds )
21. Add chopped Garlic , Sauté till the raw smell of Garlic is gone .
22. Add 4 1/2 cup of water & Salt , as soon as the water comes to the boil add the well drained Rice & stir once .
23. Cover and cook on the low heat till rice is cooked.
24. Towards the end but , when there is still some water left in the Rice ,Add the grated Carrot and chopped Pineapple stir through .Cover and cook with low heat .
25. Turn of the Flame . Serve with masala on the side or place Chicken masala on centre of plate & cover with the Rice .
