KERALA MUSSLE FRY /KALLUMAKKAYA FRY

             mussels fry / kallumakkaya fry 



iNGREDIENTS 

1/2 Kg cleaned mussels

1/2 tsp turmeric powder

salt to taste

water 

1 tsp oil ( coconut oil )

1/2 mustard seed,

2 shallots sliced

1 big chopped onion

2 green chillies, chopped

1/2 cup coconut slices

curry leaves

1tbsp garlic ,chopped

1 tbsp ginger , chopped

1/2 tsp red chilli powder

1tsp coriander powder

1 tsp Garam Masala

1 tsp pepper powder



INSTRUCTIONS

1.Take out kallumakaya from the shell and also clean up the black part of it by squeezing the dirt out.wash it thoroughly.

(You will see black intestine in the center of mussel meat take this out by pressing the bulged center of the mussel. If you buy cleaned mussels you can omit all these steps.)

2. Place a saucepan over medium heat .Add mussels ,turmeric powder1/2tsp, salt 1tsp and water1/2cup.Cook, covered, for about 5-10 minutes


3. Meanwhile heat oil in a pan over medium -high heat . Add mustard ,shallot, curry leaves, coconut slices , green chillis, chopped ginger & garlic and onions. Sauté, stirring occasionally for 3-4 minutes or until onions and coconut slices are browned.


4. Add red chilli ,coriander, black pepper and  Garam Masala powder. Season with salt.Sauté, stirring constantly, for a minute or until fragrant.Stir in cooked mussels. Add a little water if needed. cook, covered, for about 4-5 minutes.


5. Garnish with curry leaves.  


6. Serve hot with parota  ,cooked rice ,tapioca, chapathi , bread.
